I spent the vast majority of the day in the kitchen with Liam yesterday.
We cooked up some wild rice and quinoa. Cremini mushrooms, kale, parsnips and chicken as well as a savory winter soup. The photo is blurry, but you get the idea.
I tend to spend at least one weekend day cooking up a bunch of complimentary ingredients. It sure makes meal time a lot easier when all I need to do is add a salad or some roasted squash.
I also make Liam's nut and seed milks up on my big cooking day. Coconut and hemp have been his favorite recently and super easy to make.

What you'll need:
Organic, unsulphured coconut shreds, chips or flakes
Filtered water, warmed.
High speed blender (Love our VitaMix!)
Cheesecloth or nut bag
Optional Ingredients: Vanilla, cacao, cinnamon, honey or other sweetener.
Directions:
Place 1 cup coconut and 3 cups warmed filtered water in to blender.
Blend on high for 2-3 minutes.
Strain through cheesecloth or nut bag in to preferred containers.
